New Bottleworks chef to focus on the garden and ‘local’

Schlafly Bottleworks hired a new executive chef on Nov. 12, one that plans to expand its local sourcing, according to Sauce Magazine.

KT Ayers comes to the Bottleworks via Riddle’s Penultimate Cafe and Wine Bar, Annie Gunn’s, The Purple Martin and Schlafly Tap Room.

FullSizeRender(4)She told Sauce: “The daily vegetable offering can change with things we have in our own garden like beets, carrots and spinach. At this time of year, there are also turnips, kale, squash and cabbage available.”

Ayers also plans to work more with local farmers and artisans, “to incorporate more local meats, vinegars, beans and rice – ingredients that you highlight the quality of the product by keeping things simple and delicious,” she told the Riverfront Times.

Ayers credits “a variety of cuisines as influences to her culinary style — from classic French and Italian to Southern and Cajun,” according to a Schlafly press release.

  1. I couldn’t agree more. The food there has been such a let down causing me to avoid the place if I can possibly help it. I’ll probably wait a month before seeing how things have changed. I’m hoping they dont get confused thinking that “local” is enough. It needs to taste good!
