After architectural and supply-related delays, Gus’s World Famous Fried Chicken — set to open in Maplewood at 7434 Manchester Road — is back on track, ready to “rock and roll,” co-owner Jane Zimmermann said Wednesday at the site.

Co-owner Jim Zimmermann said by phone Wednesday (they were both at the location Wednesday morning) that they would like to open in about six weeks. Jane Zimmermann put it at mid- to late-October. They had originally wanted to open in mid-summer.

Jane said she had just returned from her training in Memphis, and people from St. Louis were among those lined up in the street for the fried chicken.

Drywall was going up on Wednesday, and Jim said progress should be evident soon on the outside.

“In the next week or so you should probably be seeing a bit of a dramatic change as far as the windows and doors and the painting,” he said.

Zimmermann said the air conditioning unit and the the “fryers and things like that” are scheduled to be installed soon.
